Lemon apple tarte

When I was a kid we had this huge backyard with apple-, cherry-, plum- and peartrees. And all kind of berries you can imagine. Growing up, this was the best thing. I would spend entire days in the yard, fighting off monsters and solving crime and when I got hungry, all I had to do was to pick the next best fruit. Now imagine what you could do with all these fruits during summertime. Unfortunately we moved and now all I have when I visit my parents at home are two appletress, one peartree and something that looks like cherrys. Well, when life gives you lemons…uh apples I mean…the only thing to do is an apple-lemon tarte. I actually am not the biggest fan of apple pies, but I found a recipe that taught me otherwise.

First step: pick some apples. If you can in your backyard while the sun is shining, birds are singing…you get the picture.

You need:

75 g brown sugar

175 soft butter

6 – 7 small apples

Juice of 2 lemons

200 g white sugar

A little bit of salt

2 eggs

300 g flour

2 tbsp. baking soda

150 g yogurt

A little bit of lemon peel

First, butter a tarte pan, fill with brown sugar and 25 g of butter in little flakes. Peel the apples, remove the seeds, cut in half and put them in the pan, forming a circle. Make sure to sprinkle them with lemon juice first, that way they don´t turn brown.

For the dough, mix butter, white sugar and salt. Add the eggs, flour and baking soda. Then add yogurt, lemon juice and lemon peel. Put the dough on top of the apples and spread carefully.

The tarte is baked by 175° for 45 – 60 minutes. Take it out of the oven, let it cool a little bit and turn out the cake onto a plate.

Serve with powdered sugar and whipped cream.
